Our 5th Annual Pure Puer Tea Tasting Event was held in November in Corte Madera, CA.

These original recipes featured at the event were prepared using our tea as an ingredient:

Organic Oolong Green Tea Soba Salad (Organic High Mountain Jade Oolong):
Ingredients:
3 cups organic oolong green tea water
1 lbs soba (Japanese buckwheat noodle)
2 shallot
1 bag of baby spring salad mix
1 cucumber
1 jicama
1 tsp wasabi powder or paste
1 tbs rice vinegar
1 tbs honey
1 tsp sesame oil
1 lemon
pinch of salt and pepper

1. Boil soba noodle in green tea water for 5-10 min and rinse in cold water
2. Slice cucumber, jicama and shallot
3. Wasabi vinaigrette: Mix wasabi powder, rice vinegar, honey, sesame oil, salt, pepper and lemon juice in a large bowl
4. Mix soba, sliced vegetables, and spring salad to wasabi vinaigrette

Black Puer Tea Savory Pork Endive Boat (2007 Loose Superior Black Puer Tea):
Ingredients:
4 endive
1/4 cup of concentrated black puer tea water
1 tbs corn starch
1 lbs ground pork
1 medium chopped yellow onion
4 piece scallion
1/4 cup chopped fresh mint
3 cloves minced garlic
1 lime
1 tbs vegetable oil
salt and pepper
1. Mix black puer tea water and corn starch
2. Stir fry ground pork and minced garlic in a large frying pan in high heat until golden brown
3. Add salt and pepper, yellow onion and scallion to cooked ground pork and continue to stir fry for 5 min
4. Pour 1 to 3 and cooked for another 5 min
5. Put 1 tsb of cooked savory pork to each endive
6. Sprinkle chopped mint and fresh squeezed lime juice to finish the dish

Green Puer Tea Spicy Fruit Salad (2007 Green Loose Puer Tea):
Ingredients:
1/4 cup chilled brewed green puer tea water
1 peeled grape fruit
1 mango
1-2 kiwi
1 pomegranate
1 pear
1 lemon
1 tbs honey
pinch of cumin and paprika
pinch of sea salt
1. Mix chilled green puer tea water, fresh lemon juice, honey, and pinch of sea salt
2. Cut fresh fruits to bite size and gently mix with 1
3. sprinkle cumin and paprika

Organic Green Tea Dumpling (found in our Oolong tea section):
Ingredients:
1 lbs ground chicken
3-4 organic green tea bags ( cut the bag and sift out and remove the stems with a wire mesh strainer to get 1/2 oz tea)
1 tbs vegetable oil
1 medium firm tofu (dice into 1/4″ cubes)
2-3 packages of dumpling skin (60 to 80 pieces)
1 tsp salt
1 tsp white pepper
1 tsp soy sauce

1. Place all ingredients except tofu in a bowl and mix evenly. Then add tofu and mix again.
2. Use the dumpling skin to wrap the mixed ingredients. Be sure to seal the skin completely.
3. Cook in boiling water for 2 to 3 minutes. If the dumpling has been frozen, cook in boling water for 6 to 8 minutes.

    Larry,

    I’m loving the tea, like I mentioned at the Farmer’s market.

    When making corn tortillas, try using green tea as a replacement for water in the Masa Harina mix. It makes the corn flavors “pop.”
